Potato Chicken Casserole

5 boneless skinless chicken breasts, cubed

5 medium pototes, peeled, cut into cubes

1/3 cup olive oil

1 1/2 tsp salt

1 tsp pepper

1 tbsp paprika

2 tbsp garlic powder


2 cup shredded Mexican blend cheese (or cheese of your choice, I use Daiya shredded dairy free cheese)

1 cup crumbled bacon (I use turkey bacon)

1 cup diced green onion


Preheat oven to 400 degrees

In a large bowl mix oil, salt, pepper, garlic powder and paprika

Add the potatoes and chicken and stir to coat well

Add to greased casserole dish (I used cooking spray) and bake for 55-60 minutes, stir mixture about every 20 minutes.

Once the chicken and potatoes are fully cooked, remove from oven and add cheese, bacon and green onions

Return to oven and bake for an additional 5 minutes or until cheese is melted.
